EGGLESS WHEAT FLOUR DATES,COFFEE,WALNUTS CAKE WITH COFFEE GLAZE RECIPE:

I HAVE USED 200ML MEASURING CUP.

INGREDIENTS:

Wheat flour = 2cups – 1tbsp( remove 1tbsp of wheat flour)

Corn flour = 1tbsp

Baking powder = 1 ¼ tsp

Baking soda = ½ tsp

Pinch of salt

Sugar = ¾ cup ( ½ cup regular sugar + ¼ cup brown sugar)

Instant coffee = 2tsp

Chopped walnuts = ¼ cup

Chopped seedless dates = ¾ cup

Chocochips = 2 tbsp

Oil = ½ cup

Orange juice / water = ½ cup

Milk = 1 cup

Vanilla essence = 1tsp

Tiramisu essence = few drops (optional)

COFFEE GLAZE:

Hot water= 2tbsp

Instant coffee powder = 1tsp

Icing sugar = 2cups

Melted butter = 3tbsp

Vanilla essence = 1tsp

Tiramisu essence = few drops(optional)

Chopped roasted walnuts = 2 or 3 tbsp

Chocochips = 2tbsp

INSTRUCTIONS:

 CAKE:

  • Preheat the oven @165degrees. Grease a rectangular 8 x 12 cake pan and dust it with flour.
  • Heat the milk and stir in the instant coffee powder and keep it aside.
  • Sieve wheat flour +cornflour +salt+ baking powder +baking soda 3 to 4 times from a little height.
  • To the milk and coffee mixture add sugar and beat for just 2 or 3 minutes and add oil to it and mix , now add orange juice/ water and just mix.
  • Stir in the flour mixture in 3 to 4 batches along with essence.
  • Finally stir in chopped dates + walnuts + chocochips  , with spatula, donot over mix.
  • Pour the batter into the prepared cake pan and bake it for 28mins to 30 mins / insert a skewer in center and should come clean . Kindly adjust the temperature and timer as per your oven settings.
  • Cool completely for few hours and spread the galze .

COFFEE GLAZE:

  • Combine hot water with the coffee powder and stir until blended, To this  whisk together the icing sugar + melted butter + vanilla essence .  if it needs to be thinner, add just ½ tsp of hot water at a time to get desired consistency.
  • Spread/pour the coffee glaze over the cooled cake and sprinkle the chopped walnuts and chocohips  on top. Let cool until the glaze sets ,  and few clicks before cutting.
