EGGLESS WHEAT FRUIT CAKE RECIPE:

I have used 200ml measuring cup set for measuring the ingredients.

Wheat flour= 1 ½ cups

Corn flour= 1tbsp

Baking powder= 1 ¼ tsp

Baking soda= ½ tsp

Cinnamon powder = ¼ tsp

Pinch of nutmeg ,cloves powder .

Pinch of mixed spices or garam masala powder.

Pinch of salt.

Powdered sugar= ¾ cup

Oil = ½ cup

Melted butter = 1 tbsp

Milk = ¾ cup

Curd/yogurt= ¼ cup

White vinegar/apple cider vinegar = 1tbsp

Vanilla essence = 1tsp

Orange juice = ¾ cup

Dry fruits to soak in orange juice:

Black raisins + golden raisins= ½ cup

Chopped Dates + apricot +figs +glazed cherries =  1/3 cup

Tutti fruity = ¼ cup

Chopped cashews + almonds = ¼ cup

Orange rind = ½ tbsp

Ginger chips/powder = ½ tsp

 

 

Method:

Kindly make sure all the ingredients are at room temperature.

In a mixing bowl pour orange juice and stir in dryfruits  with orange and ginger chips mix well  and leave it to soak for 3 to 4 hours. ( strain the dryfuits if there is juice left before mixing it with batter)

Preheat the oven @ 165degrees. Grease and dust with flour a 9 inches round cake tin and keep it aside. Sieve wheat flour + corn flour +baking powder +baking soda+ salt + cinnamon powder +nutmeg cloves powder + mixed spices  4 to 5 times from a little height .  In a mixing bowl add curd + milk +powdered sugar and beat with hand mixer for 2 minutes. To this add melted butter + oil+ vinegar + vanilla essence and just mix donot over mix. Add the flour mixture in 3 batches  and just mix with balloon whisk or spatula to make a smooth batter , donot over mix.  Now   add the  soaked dryfruits mixture to this batter and just mix. Pour it in the prepared cake tin and place few cashew nuts on the top and bake it for 30 to 35 minutes /skewer  inserted in the centre comes out clean. Cool completely and slice it.

  1. Hi…thanks for ur recipe…i am a big fan of ur baking..my hubby doesn’t prefer curd taste…is there any thing else which we can use as substitute for egg other than curd..it ll b very helpful if u can suggest one.thanks

    1. thankyou very much. you can use applesauce( 1/3 cup of applesauce = 1 egg) or ground flaxseeds( 1 tbsp of ground flaxseed mixed with 3tbsp of water = 1 egg) as egg replacement.
