EGGLESS WHEAT PINEAPPLE MINI LOAVES RECIPE:

WHEAT FLOUR=  1 ¾ CUP ,

CORNFLOUR =1TBSP

BAKING POWDER= 1 ¾ TSP

BAKING SODA = ½ TSP

PINCH OF SALT

POWDERED SUGAR= ½ CUP

OIL = ½ CUP

MELTED BUTTER= 1TSP

MILK= ¾ CUP

CURD= ¼ CUP

PINEAPPLE CRUSH= 1/3 CUP

PINEAPPLE ESSENCE = 3DROPS

VANILLA ESSENCE= ½ TSP

METHOD:  make sure all the ingredients are at room temperature.  I have used 200ml set cups for measuring. 

Grease and dust with flour 12 hole mini loaf tin, or  use 12hole muffin tray with bigger cupcake liners.  Preheat the oven for 10 mins @ 165degrees . Sieve wheat flour + corn flour+ baking powder+baking soda + salt  5 to 6 times( from a little height) and keep it aside.In a mixing bowl  mix curd and milk and beat for 2 mins with electric beater.  Add powdered sugar and mix . Now add oil + melted butter and just mix , to this add  vanilla essence and pineapple essence and mix.  Add the flour mixture in 3 batches and  mix it with baloon whisk , donot over mix . Add pineapple crush to this batter and mix it with spatula , if  the batter is little thick add 1 or 2 tbsp of milk and mix it. Spoon the batter into the mini loaf tin and bake it for 20 to 22 mins / golden brown. Remove it from the oven and cool completely.  These loaves are very tasty on the second day.
